Nat and Julia say:
Nat asks Julia:
" How's your curry?"
Julia says:
" It's great."
Julia says " She's a computer programmer".
Nat say: " He's from my hometown"
it's = it is she's = she is he's = he is

We call it's, she's, he's contractions or short forms.

Contraction
I am I'm (not)
You are You're (not)
He is He's (not)
She is She's (not)
It is It's (not)
We are We're (not)
They are They're (not)

We make contractions with other words:

How's your curry? = How is your curry?
What's her name? = What is her name?

Sometimes we use n't for not :
aren't = are not
isn't = is not
